Thought I would share...

Injecting the pork. Secret sauce.



Rubbing yellow mustard all over it, makes it tender. You don't taste any mustard when it's done.




Dry rub. Rub it in real good.



Wrap it up and leave in the fridge overnight.



Water and apple juice with cut apples for the smokers water pan.



And smoke that pork for 10 hours. mmmmmmmmmm yummy.

can't see the pics at work, but what do you use for wood in yours?

I've been using hickory chips, but they burn away to nothing after a couple hours and I have to add more....I soak them in water to make them smoke more.

Or are you using charcoal?

Charcoal base but then hickory and apple soaked overnight on this one.

I add chips often. Like alot often.
