I've never made one ,and was wondering if anyone has made one from scratch? has a good recipe, or had success w/ a good mix?

What exactly is the attraction with the pineapple upside down cake? Seems like I've heard of this before as a trail food. Where does this come from?

I thikn possibly someone of important stature in the Swanky commmunity has made such a cake.
i found a recipe that looks adaptable I'll give it a go this week and call it "REV. A".

Easy Pineapple Upside-Down Cake

1 (9-ounce) package yellow cake mix (such as Jiffy)
1 cup light brown sugar, packed
1 stick (1/2 cup) margarine or butter
1 (14.5-ounce) can pineapple slices
Maraschino cherries
Mix yellow cake mix as directed on package, using juice from pineapple instead of water, add water to make up necessary amount called for, if needed.
Melt butter and brown sugar over low heat in a large 10-inch pan or iron skillet.
Place pineapple rings onto butter/brown sugar mixture in pan, and put cherries in rings. Pour cake batter on top.
Bake at 350*F (175*C) for 1 hour. Let stand for 5 minutes and flip over onto a large cake plate.
Makes one (10-inch) cake.

Alright, I'll assume you're going to use a dutch oven for this...

Use a "pineapple upside down cake" mix for your Pineapple upside down cake. They actually make such a thing. Smile

Cover the bottom of the oven w/ a sheet of HVY DUTY aluminum foil.

Heat the butter, than add the brown sugar and allow to carmelize w/o burning it. When it's golden colored, not brown, add the pineapple slices (cherries if you've got to), and then the batter. Use the pineapple jc, and water to complete the cake recipe.

Cook as you would w/ any dutch oven recipe, being careful not to overcook. The cakes done in maybe 35-45 minutes.

Let it sit for 3-5 minutes then turn out onto a plate and carefully remove the foil.

NO dutch oven -a ring mold/bundt pan , and a couple other items to complete the oven.

I didn't realize you were thinking of this for your trip into Supai. Me personally, I'd let a mule carry that oven down and plan meals around it. Chili w/ cornbread crust, beef stew w/ biscuit tops, Crazy ass bkfst thing with eggs, meat, and pot. Oh, and don't forget the raspberry-peach cobbler for the 2nd night...

No no that, you were mocking me smiley34 about there actually being prepared mixes -after I asked for a good mix. Brought it on yourself.

I never let stress like that buildup, even when folks are just pokn fun. I always try to match "dig" for "dig"- tho I'm not the best at it by any stretch.

Well Roll Eyes, I did cook professionally in and around PHX almost 15 years Big Grin.. Wrigley Mansion, Christophers, The Phoenician Resort, Avanti/Pointe Hilton, Top of the Market/Fish Market, etc. I'd still be cooking, but the 80-100 hour workweeks were killin' me. Great hobby, cruddy way to make a life.

Not that it's the same arena, but I thought a Chili cookoff would be cool. Non traditional chili too, you can use beans if you think thats not some sort of sin.. Maybe for the next movie night?
