Pacetter headers will be fine and cheap. as for the rest of the exhaust, thats personal preference. go to a exhaust shop and get what sounds the best to you.

I have installed headers before on other vehicles and realize they are a pain.

How rough is installation on V-6, 1995 Pathfinder with auto trns?

The only hard parts is there's almost no roam to work. Usually with the 3.0 you'll have a few broken studs which can be a pain to remove and replace.

broken studs are prolly the worst of it.
I run a 2.25" magnaflow cat & mufler I ran 2" pipe after the mufler to reduce backfire from lack of preassure. I liked it better after reducing it.

IMO larger than 2" pipe on vg30 w/ headders robbs you of low end tq

as far as efficiancy, I now get 20mpg on the higway and it used to never do better than 17
